Surf perch

    What is the best way to cook surf perch?

    Thats a good one that id like to know too. I have scalled cut off head and fins and just fried them but thats all I know. Next time since I learned to fillet I would try that if bones aint to gnarley and Id still have meat left ,Hate wasting a fish for benifits of learning thou

    I cook them like I do trout.

    Gut, head scale and clean fish to liking.

    I put lemon wedge in belly with time and garlic powder, olive oil of your choice on the outside and wrap up in foil.

    Broil or BBQ 5 to 10 minutes preside depending on how hot your fire gets and how big the fish is.

    Starting at the back bone I peal the meat on each side of the fish, toward the belly, off the ribs. You won't have many bones left if you take your time. Then just eat with your favorite side dish leaving only the skin behind.

    Perch makes good ceviche too, as well as fileted and deep fried for fish tacos but that isn't my favorite fish for tacos. That and I have never caught one big enough to filet either.

    I do them like I do my Crappie gut n gill n scale, salt them and drop em n the fryer....best part to eat are the heads!

    Gut gill scale head on flip-em in salt pepper flour mixture and pan fry till crispy!!!
    Good Eats right there!

    I pan fried and they tasted like crap. The meat tasted and felt like mashed potatoes. Any tips?

    Thats what happens when you over cook it, or your fish is bad....

    Yep, if you plan to eat them keep them on ice as soon as you catch them or before they get warm in the sun. The meat will turn to mush. Cleaning them as soon as you can helps with the taste too.
