Smoked Cuda ?

I've smoked salmon,tuna ect... How does cuda taste?

It's actually very good if it's done fresh. Never try to eat frozen cuda in any way, it doesn't keep well.

It is Excellent..............As long as you Bleed & Ice fish immediatly after catch.Then when you fillet them,cut out the dark bloodline in the middle and keep only the white meat on top & bottom.I made about 10lbs a couple weeks ago & everyone LOVED it......

what kind of rub and wood did you use. I aways use the old stand by brine first and smoke with apple wood covered with a honey brown sugar glaze.

Good is right. The oilyness of the meat makes it excellent for smoking.
I like to smoke it with skin on and just peel of the skin and red meat
when I eat it. My girlfriends father however eats it red meat and all.

Yea I agree when I smoke I leave the skin on and clean out the red (nasty stuff)
the kids realy like it just as it comes out still warm and gooey from the candy coating
