Thumbs up Yellowtail with Mango and Peach Sauce

Sorry guys it's been a while since I posted one of my famous recipes so here's one for the occassion:

4- 6 to 8 oz. Yellowtail skinless fillets
1/4 cup flour
1/3 cup vegetable oil or less
Lemon and fresh parsley for garnish

Mango and Peach Sauce (recipe follows)
Lemon slices and parsley for garnish

Preheat oven to 375 degrees, dust the yellowtail with flour on both sides. Heat the oil in large heav skillet ad saute fish until golden brown, about 4 to 5 minutes on each side.
Place the fish on a heat proof platter in the oven to finish cooking, about 7 to 10 minutes or less depending on thickness of fish. Do not over cook the fish it should remain moist.
Place fish on a serving platter and top with the warmed Mango and Peach Sauce. Garnis with lemon slices an parsley.

Mango and Peach Sauce
3/4 cup fresh mango, pitted and peeled (about 1 large mango)
3/4 cup fresh peaches, pitted and peeled ( about 3 medium)
1/4 cup melon flavored liqueur

Puree the prepared mango and peaches in a container in blender or food processor. Place mixture in saucepan and bring to boil. Stir in the melon liqueur, then reduce heat to low to keep sauce warm until the fish is ready.

Serves 2

You can apply this recipe to WSB, Grouper, Red Snapper, Whitefish, Dorado, Halibut.....I just particularily like it with Yellowtail
