| Here's a good one, "Garlicky Shrimp Scampi" Ingredients: 1 tablespoon olive oil, 1 pound large shrimp-peeled-deveined and butterflied, 3 garlic cloves-minced, 1/4 teaspoon salt, 1/4 teaspoon freshly ground pepper, 1/2 cup dry white wine, 1/2 cup reduced-sodium chicken broth, 3 scallions sliced, 2 tablespoons chopped fresh parsley, 2 tablespoons fresh lemon juice, 1/2 cup plain dry bread crumbs. To butterfly shrimp, peel the shrimp. Then, using a paring knife, slice along the back of shrimp from top to tail, cutting the shrimp almost but not entirely in half. With the blade of your knife, scrape out the vein and flatten the shrimp slightly. 1) Preheat the broiler. 2) Heat the oil in a non-stick skillet with an ovenproof handle over medium-high heat. Add the shrimp, garlic, salt and pepper; cook, stirring frequently, just until the shrimp begin to turn pink, about 3 minutes. Add the wine, broth, scallions, parsley and lemon juice; bring to a boil. Reduce the heat and simmer, uncovered, until the liquid begins to thicken slightly and the shrimp are just opaque in the center, about 3 minutes. 3) Top the shrimp mixture with the bread crumbs. Place the skillet under the broiler and broil 5 inches from the heat until the topping is golden, about 2 minutes. Prep time 20 minutes, cooking time is about 10 minutes, serves 4. | Shrimp Scampi is one of my favorite dishes ever! I can't wait to try this one out. Never heard of using breadcrumbs with it before but it sounds yummy!
