Here's another easy one....


Shrimp in Lime Butter Sauce


Prep: 20 minutes


Cook: about 10 minutes


Serves: 4


Ingredients: 1 pound large shrimp, 1 cup chicken broth, 4 garlic cloves-minced, 2 tablespoons fresh lime juice, 1 tablespoon butter, 1/4 cup chopped fresh cilantro, salt to taste, coarsely ground black pepper to taste.


1) Make a cut along the outer curved side of each shrimp. Hold under cold running water to rinse out the veins. Pat them dry with paper towels, then spray the shrimp with olive oil nonstick spray.


2) Heat a large nonstick skillet over medium heat. Add the shrimp and cook until just opaque in the center, 3-4 minutes on each side. Transfer the shrimp to a plate.


3) Add the broth and garlic to the skillet; cook until the broth is reduced by one half, 3-4 minutes. Stir in the lime juice and cook about 30 seconds. Add the shrimp and butter, stirring to blend. Stir in the cilantro and cook until the shrimp is heated through, about 30 seconds. Season with salt and pepper.


*How I Did It* Sauteing shrimp in their shells eliminates the need to use alot of oil to keep them from sticking to the pan and also makes for a stunning presentation. Use scissors or a small paring knife to cut the shells; this facilitates cleaning the shrimp and makes them easier to peel.

Mmmmm, I really want to do this one. Despite the name of it guys, this is really not a very high fat recipe. 1 tbsp of butter to 1 lb of shrimp is not too much.
